Hey there! I weighed myself this morning and am down another POUND. I am soooo excited because this is the least I have weighed in more than three years and what’s more, I haven’t felt this good in at least 30 years!

Anyone who says it is impossible to lose weight when you are over 60 and/or have Hashimotos….not true! This is working! It’s really and truly working! I am eating MORE than I was before on Paleo, am less hungry and am actually LOSING weight. Heck yeah!

If you read through my daily posts, you may have noticed I make things easy on myself by making BIG batches of plant-based meals so I don’t have to rethink every single meal throughout the week. My real-life job eats my life and I- like so many of us working folks- simply don’t have the mental fire-power to spend on (7 x 3) 21 meals per week. Heck, I have enough trouble just getting dressed in the morning before I’ve had any coffee! KISS, right?

Another quick ramble and then on to what I ate today.

I made a quick stop at Costco to pick up some veggies today and realized my grocery bill had decreased dramatically. Yes, I bought a salad kit and ate half of it today, but the whole kit was only $5.99. When was the last time I ate lunch for $3.00? (I threw out the salad dressing packets. Uck.) I’m thinking I am going to start tracking ALL food costs for data points. Yes, I have a math geek job, can you tell? 😀

Breakfast: Back to what I know works for me….gluten-free extra thick oatmeal, a heaping teaspoon of flaxseeds and a cup of blueberries. Yum.

Lunch: Half a salad kit minus the gross dressing! I threw in the remainder of the chickpeas I had in the freezer (about a half-cup) and tossed some rice vinegar over the top. It really tasted better than it sounds. the salad kit came with dried cranberries and toasted pumpkin seeds, which combined with the chickpeas gave it some staying power.

Dinner: The very last serving of the mung bean soup I made earlier in the week with two heaping cups of fresh baby spinach melted down in the heat.

After eating dinner, I thought I might still be hungry, but realized that I was just tired. Not surprising considering how many hours I have been working. I walked the furkid around the block and went to bed!
