Here it is a Sunday and what am I doing? Working. Not just working, but workingworkingworking. While I so appreciate having a job/making a living, it would be nice to get some sleep.
Why I am whining about this? Because when I get really tired or stressed, my eating choices tend to deteriorate proportionately. I’ve learned to quit beating up on myself, because homelessness is a worse choice than brownies, right? But just recognizing what is happening- the overwhelm- can be enough to clear my head so I can make better choices in the present super-stressed-out moment.
Breakfast: Leftovers! I heated up some of the One Pot Mexican Quinoa in a pan and threw in a BUNCH of winter greens for good measure.
Lunch: Sooooo tired and still more to go on the report. I opened a can of Amy’s vegetarian chili and called it good. Next time I’m going to add some beans because it really didn’t take me long before I was hungry again.
Dinner: MORH salad rolls! Nom! They are getting easier with practice. Maybe some day they’ll actually look like the ones I get at Thai restaurants. Or not. Ha!
Snack: Small organic Gala apple and a slice of Tillamook Jalapeno Jack cheese. Nom.
