What I ate today.

Breakfast: I was in a hurry to got to Costco before the crowds so I grabbed a Bounce Vanilla-Almond Protein ball and ran out the door.

Lunch: Back from Costco and absolutely famished. And….I couldn’t resist the Costco rotisserie chickens. Allllll than lovely umami called out to me, promising juicy chickeny tastiness, so I bought one and dove into it as soon as I got home. 8 oz of chicken, a cup of raw snow peas, and a cup of leftover Texas caviar (bean salad) became lunch.

Dinner: I spent the remainder of the day trying trying trying to make progress on a report. I got a chunk of it knocked out and by 5:30 pm realized I was suuuuper hungry. I kept seeing recipes for spring rolls with peanut sauce and got the rice paper wrappers when I was shopping earlier. This was a new one for me and wowzers, talk about a learning curve!

Yes, they are (theoretically) a fast, no-cook meal. Now let’s talk about the wrappers.

ARGH. They are sticky little bitches! The first three attempts went straight into the trash. There was no saving them.

I realized cold water does a better job in softening the wrappers than hot (doh), so I switched out the water and things went a little bit better. Still, mine turned out truly ugly.  As in horrible/somewhat obscene.  But the new and improved ugly ones held together until I could try one.

So, let’s talk about peanut sauce. Homemade peanut sauce is easy-peasey. There a a gazillion recipes out there on the internet, but I like the one from Recipe Tin Eats.

Satay Peanut Sauce for Stir Fries

I added in a LOT more fresh ginger, because I love the kick in my mouth. Left out the cornstarch because it really doesn’t need it. The beauty of peanut sauce is it comes together in a flash UNLIKE THE ROLLS. LOL! Despite how it looks, the end result is, oh, so tasty.

I ate five. Ha!
