What I ate today….

Breakfast: Extra-thick gluten-free oatmeal with a heaping teaspoon of flaxseeds and a cup of frozen blueberries. I do love this. It’s gorgeous, tasty and feels luxurious.

Lunch: A heaping bowl of homemade Texas Caviar

Dinner: So….I got a huge bag of dried mung beans at Costco and stored it on a shelf in my pantry. I was moving things around the other day and SPLAT! The bag tipped over, the zip lock top let go and mung beans went *everywhere*. Think BBs spilling and zipping into every little nook and cranny. ARGH.

I cleaned them up, but there was at least 2 full cups of them and I just couldn’t bear to throw them out. So today I washed them in a colander and threw them in a big stew pot. I added sauteed onion and celery, added a can of Muir Glen fire-roasted tomatoes, a heaping tablespoon of turmeric, a scoop of Thai chili past and a couple heaping tablespoons of freshly ground ginger. Oh, and I had some leftover grated carrot lingering in the fridge, so why not throw that in too?

Result? Oh, heck yeah. Tasty and filling and chock full of fiber! I threw a couple cups of the steaming stewed mung beans over a couple handfuls of fresh spinach, because greens! And leftovers! I’m calling this a total win.
