I weighed myself this morning and am down another pound- 16.6 pounds so far! Don’t ask how many more to go; it’s too depressing. LOL

What I ate today….

Breakfast: Gluten-free rolled oats with a spoon of flaxseeds and 1 cup of blueberries

Lunch: Leftover One Pan Mexican Quinoa and a couple raw carrots and some raw mixed greens thrown into the quinoa for more vitamins

Dinner: Oh man, this is so easy and good. I made red snapper in a parchment paper packet with sliced baby potatoes, cherry tomatoes and a splash of preserved lemons

Yes, I know this isn’t vegan. But it is low fat, easy and delicious. People in Blue Zones eat a little fish periodically and I’m going with that. 😀
