I learned a new thing yesterday/today. Kave tea, which is advertised as being relaxing stress-relieving tea is definitely NOT my friend. The box of tea bags went into the trash. ‘Nuff said.
Breakfast: The extra-thick GF oats with flaxseed and blueberries.
Lunch: More little black bean taco with corn tortillas. I threw some mango-peach salsa on each one. Oooo, do I ever love that stuff. I get it from Costco, so naturally it comes in the VAT-sized container. No worries. It’s my fave.
Dinner: Red snapper in papillote. This has become my favorite way of cooking white fish. The fish stays super moist and the veggies underneath take on a golden caramel richness. Close to zero fat and it cooks in 15 minutes. I steamed some asparagus to go with it. Holy smokes, what a delicious dinner.
Snack: Not so much a snack as medicine- one-half cup low fat coconut milk with a teaspoon of turmeric and several grinds of black pepper. It beats down inflammation in my body and I am hoping- perhaps unrealistically- that it will help my eye heal. Time will tell!
Total fiber: 36 grams
