I made it through another month at work. As my friends will tell you, that can be an accomplishment all by itself. Why? I have a deadline-driven job with the biggest deadline being the last day of every month. On the rare month, things are completed early, but it is much more typical to be scrambling to get everything uploaded to clients on the last day.

Stress? Yeah, I have that. LOL

Back to food and what I ate today.

I recently bought one of those 2 pound bags of “riced” cauliflower at Costco because I keep seeing ALL the recipes for cauliflower pizza, tater tots, fried rice, whatever. I love Chinese/Thai/Vietnamese food and have been craving fried rice, so what the heck, I bought a bag and decided to give it a go.

FAIL.

NO. STEP AWAY FROM THE RICED CAULIFLOWER.

I had already tried the cauliflower pizza crust in three different iterations and honestly, all of them were total FAILS. I don’t know why I thought the fried “rice” recipe would be any better, but hey! Fiber!

I’m sorry, but the whole cauliflower replacement fad is a big fat lie.

Cauliflower fried rice ends up being mushy cauliflower with a lot of seasoning trying desperately to be fried rice.

And cauliflower pizza crust? No. It’s a weirdly textured watery cauliflower wanna-be FAIL.

To the haters out there who loooove the cauliflower replacement recipes. Go you. And yes, I have diligently squeezed the life out of the cauliflower and tried multiple recipes with multiple “tips and tricks”…

No.  Just no.

I have decided that if I want fried rice, I’m going to make the rice and eat the rice.

Same for pizza crust, tater tots, dinner rolls and whatever concoction y’all are subbing in with riced cauliflower.

As usual, YMMV, but I’m gonna stick with the real thing. If I want cake, I’m going to eat the damn cake.

Breakfast: GF Oats with flaxseeds and blueberries. Heeeeey, I’m nearly out of blueberries. Looks like a run to Grocery Outlet is happening soon!

Lunch: Leftover ATK Vegetable and Chickpea Curry with 3 heaping handfuls of power greens cooked in when I was heating it up on the stove.

Dinner: Aforementioned fried “rice”. Ugh. Topped it off with a half a Honeycrisp apple (it was HUGE!) and a couple tablespoons of peanut butter. I should have just eaten the apple for dinner and skipped the cauliflower experiment, but I’m a sucker for trying new food things.

Sigh. Onward!
