Yesterday was the first full guilt-free day I have taken off from work in a full month. Yes, work has been *that* crazy. Or as one of my co-workers suggested, maybe the stress from work directly contributed to the mini-stroke in my left eye last week?

Yeah, most certainly maybe.

The good news is the vision is slowly returning and I am incredibly grateful to St Jude, the Universe, Divine Intervention…..seriously not picky about who to thank! Thank You! <3

Okay, on to what I ate today…..

Breakfast: Yeah, you know the drill. Oatmeal with flaxseed and blueberries. THAT, right there folks, is 10 grams of fiber and three foods that nutritionists agree we should eat more of on the reg.

Lunch: omg! I got this recipe off a FB group called Whole-Foods-Plant-Based-Diet.Com. They call it Faux Tuna Salad and I call it delicious! It’s basically chickpeas with mustard, avocado instead of mayo, pickle onions…..the typical stuff that you put into a tuna salad sammie, except this is so much better! I rolled it up in collard leaves (removed the hard center rib.) It’s absolutely BOMB-alicious! I keep saying vegan food can be awesome and here it is folks, your entry-level drug into a plant-based diet. LOL (Photo below)

Dinner: Inspired by the lunch recipe, I tried out another I stumbled across on the web.

“Quinoa Stuffed Squash with Balsamic Maple Glaze”

Save yourself and pass this one by. It’s way too sweet. Uck. I ate part of it because I was hungry and threw the rest in the trash. The concept was a good one that I may try and tweak in the future, namely quinoa and squash and something savory to make a plant-based casserole. Future plans. LOL

Total fiber for the day: 43 grams
