I woke up really early today because I had so many things I had to get done. By 11:30 am, I had been to NINE different places from the pet foods supply store to the library to Costco to Goodwill. Whew.

I knew from experience that I needed to eat breakfast before I left, and my favorite oatmeal/flaxseed/blueberry breakfast happened before I left the house.

I got home and was starving, so thank goodness for leftovers. I had to clean out the fridge to find spaces to put the veggies, so lunch became leftovers which were the last of the black beans in a little enchilada sauce on 2 corn tortillas and a couple tablespoons of that kick-ass mango-peach organic salsa Santa Barbara.

I was still hungry and hey….something really needed to be done with aaaaaaallllllllll those rutabagas hiding out in the bottom drawer of the fridge. I poked around on the internet and found an interesting recipe for rutabaga “fries.”

So….I have ranted about food pretending to be something it isn’t…..and rutabagas roasted in a 400° oven are NOT fries.

On the other hand, roasted rutabagas are surprisingly tasty. I was afraid their cruciferous qualities would be, er, “enhanced”, thus making them basically inedible.

But no! They became mellow and kind of sweet. I know, I was shocked too!

The recipe called for tossing the cubed-up root veggie with Asian condiments- hoisin, tamari, ginger and dark sesame oil- but I found the flavors just burned away during the baking process. Next time I will cook the rutabagas first and then add seasonings near the end.

Dinner: It has been a heck of a week and next week is promising to be just as crazy. I NEEDED COMFORT FOOD!

Well, that and I found a box of mushrooms hanging out in the back of the fridge. They were on the verge of turning bad so they needed to be cooked TODAY. During my stop at the library earlier today, I perused the used book sale and snagged two cookbooks I had been drooling over. (Yes, drooling. Go ahead and judge me. LOL)

One of them had a vegetarian stroganoff, which minus the milk and sour cream, actually sounded pretty good. I poked around on MyFitnessPal to try and come up with an idea of what to put the mushrooms over and decided on a plain polenta. (No cream, no cheese. Just cornmeal and water.)  I added some steamed asparagus at the end and it totally hit the spot. yes, it was a lot of food, but it was warm, comforting and delicious.

Sadly, I have no pics of the dinner, but there was enough for a second round tomorrow, so I’ll snag a photo tomorrow. Criss-cross-applesauce!
