Hey there! Day 3 with the weird eye thing and feeling much better. I can see little clear spots throughout the grey field, so here’s hoping it’s healing and my sight is restored.

I weighed myself this morning and am down another pound. PROOF positive that WFPB eating works! And yes, I am praying the insides of my arteries are also losing fat/plaque while the flappy parts under my arms get smaller! LOL

I still have to make a living, so back to the grindstone. Two marinas are next up in the queue and Imma getting it DONE.

What did I eat today?

Breakfast: The usual. Yes, it’s boring, but the advantage of having the same thing every day is I don’t have to think. Heck, the other day I poured whole coffee beans into the part of the coffeemaker where the water is supposed to go! True story.  If I can’t manage to get the whole beans into the hopper of the coffee grinder, then I really am better off not trying to negotiate a new brekkie every day! HA!

Lunch: That black bean-enchilada sauce thing I had last night was pretty good, so a part of the second half became today’s lunch on 3 corn tortillas. Yum.

Okay, I hear you saying that corn tortillas aren’t whole foods. Yes, you are right, but they do have a LOT of fiber, so I’m going with it. The half-bag of GF “flour” tortillas? Yeah, those are going in the trash.

And….there was a half a red bell pepper left over, so munchmunch, it was gone. 😀

Dinner: The thing about batch cooking is I always have a backup plan when I am too tired to think. Dinner was more of the vegetable curry with a BUNCH of shredded purple cabbage thrown in and cooked down. That cabbage has been in the fridge for at least two months from the Winter CSA.  I gotta get that thing eaten before the Spring/Summer share starts in the next few weeks!

For those who think plant-based eating is nasty, do these black bean tacos look nasty/boring/broken? They were tasty, filling and my new go-to when I am too tired to think. Yum!
