It’s Sunday and I am clean out of leftovers. I really wanted something different and a friend sent me a recipe from ATK (America’s Test Kitchen) for a Vegetable Curry.

ohmygosh, I LOVE spicy food, so that recipe jumped up to the top of the queue and I am not sorry. 😀

Breakfast: Oatmeal and blueberries! My favorite breakfast. Yes, I know I am in a rut and no, I don’t care. I have to save all my spoons for whatever the day dishes out, so hello, oatmeal!

Lunch: Part 2 of the salad from yesterday. I was out of chickpeas so I threw on a half cup of great northern beans. Not the greatest, but it worked.

Snack: Hangry! One ounce of raw almonds and I am good to go.

Dinner: The ATK Curry, as noted above.  I searched out the link on the interwebs and now it’s behind a paywall. Well, nutz. This one is close enough to what I have printed out, so feel free to use this instead. (Thank you, Fine Cooking!)

South Indian-Style Vegetable Curry Recipe

Before I sign off, I wanted to tell you about the absolutely wonderful library in my town. Twice a year they have a book sale from books that have been donated to the library in the prior 6 months. The money raised goes back to the library, so it’s a win-win-win.

When I went to drop off a book that was due and I saw the sale, I just HAD to go and check it out. There are always lots of cookbooks and look at what I found! I think I spent a total of $4.00 and 15 minutes of my time. I can’t wait to try some of the recipes and I’ll be sure to share the winners on this page.
