Remember ALL those key limes I got in the organic delivery box two weeks ago?The following recipe uses 1/4 cup of fresh key lime juice and was declared to be a Winner by The Official Recipe Tester (Steve.) The chicken can either marinate during the day, or if you’re like me, just throw it together at the last minute and it’s equally delicious! 🙂 I served the chicken with baked sweet potatoes but if you double the amount of the marinade, it would be very good over rice as well!


Citrus-Soy Marinated Chicken- Serves 3 to 4 generous portions
1 # boneless, skinless chicken thighs or breasts with all visible fat cut off (Scissors make this easy work.)
1/4 c. fresh key lime juice
2 T. low sodium soy sauce
2 T. peeled and minced fresh ginger

6 garlic cloves, roughly chopped
1 medium yellow onion, sliced into slim wedges
1 sweet red bell pepper, sliced into thick matchsticks
2 cayenne peppers, seeded and minced (Can also use jalapenos or habaneros)
1 T. olive oil

Mix the lime juice, soy sauce and minced ginger in a medium bowl. Add the chicken. If you want the chicken to absorb more flavor, cut it into smaller pieces (2 to 3 bites). Gently fold the chicken into the marinade and let it sit in the fridge for up to 4 hours.

Turn the oven to 350 degrees.

Using a large heavy skillet, put on a medium high flame and heat to hot. (Cast iron is perfect.) Add the olive oil and wait a half-minute for the oil to heat. Add the veggies and stir so they do not stick to the bottom of the pan. When the veggies have softened and the edges have started to turn a golden brown (caramelize), remove them from the pan and save them for the final step.

Add the chicken pieces into the hot pan. (You may need to turn the flame to a medium setting.) Cook until each side is seared and has a crusty finish. Add the reserved marinade and cook over a high heat until reduced by half. Add the veggie mixture back into the pan (Just throw them on top of the chicken) and place the whole shebang into the oven while you finish getting everything else ready for dinner. The chicken will finish cooking in 15 minutes which gives you enough time to set the table and get another veggie (or salad) ready to go.
