As any of my friends can tell you, I am not much of a drinker. (Alcohol gives me massive heartburn, so there is just no feel-good payoff.) But when it comes to cooking with alcohol, boy howdy, the right kind of liquor can elevate a recipe into a whole other sphere of deliciousness. For example, bourbon and peaches, a classic combo of yum. One small tip when cooking with alcohol- use product that is delicious on its own. Alcohol doesn’t magically improve upon cooking. Cook with the good stuff!

Bourbon Peach Cobbler

Easy peach dessert with a sweet and creamy kick. Serve with a scoop of vanilla ice cream if you are feeling indulgent.
  • 1/4 cup butter
  • 1/3 cup brown sugar, packed
  • 8 large peaches, peeled and cut in halves
  • 2 tablespoons lemon juice
  • 2-3 tablespoons bourbon
  • 1 cup flour (can use gluten-free blend- 140 grams=1 cup)
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1 cup milk (can substitute rice milk or coconut milk)
  1. Preheat oven to 400°.
  2. Grease the sides of a 9″ x 9″ baking dish and place the dish over LOW heat on the top of the stove.
  3. Add the butter and wait for it to start melting. Once it starts to melt, add in the brown sugar and bourbon. Tilt the pan to gently mix and place back on the heat.
  4. Carefully place the peach halves face side down into the sugar/butter/bourbon mix and let this slowly heat while prepping the topping. If you have extra peaches, you can cut them into quarters and fill in the spaces between the peach halves. The goal is to get a thick layer of fruit on the bottom of the cobbler. Sprinkle the lemon juice on top of the peaches.
  5. In a medium bowl add the dry ingredients and mix to combine. Add the milk into the dry ingredients and mix with a wire whip until batter is mostly smooth.
  6. Pour the batter over the peaches and place the pan in the oven to bake. Bake cobbler for 35 to 45 minutes or until golden brown on top and bubbly.
  7. Serve warm and save leftovers for breakfast (if there are any!)
